When noodles are "less boiled" they are usually chewy or undercooked.

we say 'al dente'. but thats only for food that is meant to be like that. if you are cooking it fully then you would say undercooked or not done.

@monica8: hmm I'm not to sure. I've never heard of noodles that are firm. I've always had them fully cooked.
