I'm a little confused with normalizers in Japanese.

Reading an article about it, it explains that adding の to a verb creates a noun in English.
They compare it adding "ing" to a verb, (するの = doing, etc).

However, this just doesn't make sense to me because "doing" and "running" just aren't verbs in English, to my understanding.

Can someone please take the time to explain what I'm talking about with an example?

するの means the same as すること, which is a noun.

Does it make sense?

の is not always equivalent to こと.

の has several functions, one of which is to nominalize verb.

Verbs in dictionary form can directly connect to noun.
食べる人
走る亀
泳ぐ名人
戦うゲーマーgamer

こと is noun so that verb + こと will make verb as noun phrase. It is not the process of nominalization but same with other nouns to make noun phrase.
Verb+こと cannot be freely used as substitution of nominalized verb because こと has own meaning and we may not neglect the meaning of こと in the phrase.
あそこにいるのは誰？　の＝人≠こと
わたしが昨日食べたのは実においしかった。　の＝物≠こと
道路を横断するのに、地下道があった方がよい。　の＝ためor時≠こと

Sorry to say I'm not a master of English so that I cannot say anything about comparison between 走るの and running.

At least, in order to overcome grammatical restriction where noun is required but we want to put a verb there, this way of nominalization may help us. One of raison d'être for の as nominalizer exists there.

する is a present verb.
した is a past form of する.

すること means a present event
したこと means a past event

An example sentence using ''swim'' is below.

swim
泳ぐ　present
泳いだ　past

＊present event
Swimming is fun.
泳ぐのは楽しい。
泳ぐことは楽しい。

＊past event
Swimming was fun.
泳ぐのは楽しかった。
泳ぐことは楽しかった。
or
泳いだのは楽しかった。
泳いだことは楽しかった。

As for the past event, either 泳ぐこと or 泳いだこと is fine.
