it shouldn't be "unlike", it should be "different" or "unalike"
The rest of your sentence is grammatically correct, but it doesn't sound natural for daily conversation, because the words are too long. "gregarious" especially is pretty uncommon if you're just talking between friends.
I'd say
"Both siblings are completely different. One is really quiet while the other is outgoing"
aloof does not exactly mean "really quiet", so you could just say aloof or distant

There's a tautology here that I'd avoid. If one sibling is not like the other, then automatically the reverse is true, and you don't need to add "both". I'd therefore just say "The siblings are utterly unalike/different".
