If you say "a spread", you are talking about the spread as a 'type of spread', including the jar, the brand, etc.
If you say "spread", you are talking about the literal spread that is being put onto your food, like the actual substance that is being eaten.
To try and help explain it, it's like if "a spread" was like "a field" and the "spread" was like "all of the crops being grown in the field"

In more general, commonly used, contexts, the plural form will also be spread.
However, in more specific contexts, the plural form can also be spreads e.g. in reference to various types of spreads or a collection of spreads.
