How do you call some discounts depend on the period?
For example, a movie ticket at night or in the morning and an air ticket for departing at night.
I just know early bird discounts.
But are there other discounts at night?
Night owl discounts?

Generally, "early bird discount" doesn't refer to literally being early in the morning, it refers to buying something far before the deadline.
Flights leaving at ass o'clock in the morning are referred to as "red-eye flights," or just "red-eyes," and a discount for them would be called the red-eye discount, though I haven't heard that term being used before. Most of the time, people would just say, "I'm catching the red-eye to Calgary to save a little money."

@tomm To be sure, it COULD mean, "getting up early to get a lower price," but in my experience, it more applies to lotteries and such like, where the period is months in advance.

@tomm No, it would be a red-eye discount. Most of the time, it's just different pricing based on time. You might hear, "Off-peak discount," though again, that usually that refers to longer periods of time, like summer in Jasper, or winter in Waskesiu.
